It is not uncommon for a color image to be produced first, even if the final product is to be a black-and-white photo. The conversion to grayscale is then done in post-processing.
A color image as a basis also offers more possibilities for optimizing the image values. In digital times, the "black-and-white film" doesn't really exist anymore. And yet, with the right settings for exposure and contrast, you can create exactly the look you want for a black-and-white photo.
